Only I can spend hours making mushroom barley soup and FORGET TO ADD THE STUPID MUSHROOMS.

No wonder it wasn't tasting right....

lots of other veggies- carrots, onions and celery and whatnot and I kept wondering, adding more salt, pepper, etc wondering why the heck it tasted off

Ooh, what a great soup choice for a bitterly cold day though! And the barley shouldn't suffer much from cooking longer when you add the mushrooms. Mmmm.

It should work. The stew part simmers for awhile before adding the barley and mushrooms so having the barley in for a while by itself shouldn't be a big deal. But still... grrrr, I kept tasting and wondering why it was off

I put my barley in turkey soup, one of only three things where I add salt generously: turkey soup, scrambled eggs, and gravy.

(and I undersalt (how come that doesn't sound like a word, but 'oversalt' does?) everything else, especially as I'm on a restricted sodium intake. But some dishes *have* to have salt in them.)
