Zucchini Bread
Aug. 17th, 2018 11:54 am(This recipe makes 3 loaves, it's easily cut to make only one though)
4 1/2 C flour
3 tsp cinnamon
1 1/2 tsp salt
1 1/2 tsp baking soda
1 1/2 tsp nutmeg
3/4 tsp baking powder
3/4 tsp lemon peel, optional
3 tbsp flax seed meal, optional
3C grated zucchini
1 1/2C sugar (or more if you like sweeter bread)
3 eggs
1 1/2C unsweetened applesauce (oil can be used instead)
1 1/2 C chopped walnuts, optional
1) preheat oven 350 (325 if using glass pans) and grease three loaf pans
2) combine the dry ingredients (flour through flax seed meal) in one bowl
3) combine zucchini, sugar, eggs and applesauce in a second bowl
4) stir dry into wet, mix well
5) fold in walnuts
6) pour into pans
7) bake one hour (check at 55)
8) cool in pans 10 min, remove to wire rack and cool completely

(The lighting is weird, sorry about that. Also, you can't really tell by the photo but the breads don't rise very much.)
